Northfield Hospital & Clinics sponsors a Recipe for Health each week at the Riverwalk Market Fair, held Saturday mornings along the Cannon River in downtown Northfield, June through September. Here is a sample recipe:

Broccoli with Plum Sauce
Serves 4

It’s fun to experiment with seeds and spices to infuse flavor. In this dish, coriander seeds add delightful lemon-like flavor.

1 medium lemon, thinly sliced
1-inch piece unpeeled gingerroot, thinly sliced
2 cups broccoli florets (About 8 ounces)
½ teaspoon coriander seeds, crushed using a mortar and pestle
2 tablespoons plum sauce
½ teaspoon toasted sesame oil
2 teaspoons sesame seeds

In a medium saucepan, bring about ½ inch of water to a simmer over high heat. Add the lemon and gingerroot. Set a steamer basket in the water. (The water shouldn’t touch the bottom of the basket.) Put the broccoli in the basket.

Sprinkle the coriander over the broccoli. Reduce the heat and simmer, covered, for 6 to 8 minutes, or until tender crisp. Drain well, discarding the lemon and gingerroot.

Meanwhile, in a medium bowl, stir together the plum sauce, soy sauce, and sesame oil.

Stir the broccoli into the plum sauce mixture to coat.

Sprinkle with the sesame seeds.
